Tonight, trout that my husband caught yesterday ice fishing, broccoli and bread.
He's cooking the fish so I hope it turns out yummy.

mine always did too, but this was so damn good. the keys, IMO, were:
1) cook the rice the night before. I got a new rice cooker for Christmas and made a bunch for dinner the night before with a MExican meal, and purposely made leftovers. Stuck it in the fridge overnight.
2) sesame oil. just seems to add a certain je ne sais quoi to the rice.
3) topping it with basil, cilantro and sriracha. I love that combination of flavors and it goes great with fried rice. There's a great food truck here in Austin (East Side Kings) that has basil and cilantro in a lot of their dishes and I always loved it, so I decided to give it a go.
Go easy on the soy sauce IMO. I maybe put 2-3 TB in the rice, tops (and the chicken was marinated in a few TB as well). I think too much soy sauce makes it too salty and overpowers the other flavors.
I also cooked the eggs first, took em out and put em in a bowl. Then cooked the chicken, took it out and set it in a bowl. Then the rice and everything else. Then once the rice was mostly done, I threw the chicken and scrambled eggs back in there.

Lemon paprika tilapia with curry rice and steamed broccoli.
Pro tip: marinating tilapia in buttermilk for a couple hours removes the dirt taste.

Sautéed onions and garlic in water with salt and pepper. Added apple cider vinegar and let is cook down a little. It's important to keep stirring to keep the onions and garlic from burning. Add Worcester sauce, diet cherry 7up, ****in, cinnamon, cayenne pepper, sage and Louisiana hot sauce. Cook down until it thickens. Strain the sauce into a bowl. Add brown mustard and whisk until smooth.
Next time I make it, I will try to make note of amounts. It is very good and has very few calories.
