    Sweet potato recipes

    Here's the recipe for my sweet potatoes/honeyed yams for BBS & anyone who wants it. They're practically a dessert and very easy.

    6 lbs sweet potatoes
    2 sticks butter
    12 oz honey
    1 cup brown sugar
    1 cup finely chopped walnuts or pecans
    1 1/2 package mini marshmallows

    Peel & slice sweet potatoes like medallions. Boil until soft but firm. Drain & place into baking dish. Preheat oven to 350.

    Melt butter, brown sugar, and honey sauce pan. Stir continuously until butter is melted, then continue stirring until the mixture becomes a rolling boil. You must make sure that is fully boils in order for the brown sugar to melt. When you think it's melted, drizzle some on a plate and let it cool for a second - it should be smooth like caramel. If its still grainy like sugar, cook longer.

    When it's done boiling, reduce heat and stir for a couple of minutes while the bubbles go down. Next, pour over the sweet potatoes in the baking dish. Dust with a couple of shakes of salt, sprinkle with nuts (optional), and cover with marshmallows (you can sprinkle more nuts over the top).

    Bake 15-20 min or until marshmallows are toasted.

    Don't really need one, but it does make it more fun. Just bring the liquor to a boil and it will ignite on its own. Turn off the fire or remove it from the heat until the flames go out, then proceed.

    Thanks Mc! Going to give it a try; without the marshmallows though and adding a healthy dose of cinammon and nutmeg, with a splash of orange juice.

    Wish I had found this thread sooner. The wife made sweet potatoes today ( her first attempt), she did a good job. She looked up and found a recipe online...I think it was paula deens....and they were good.

    Sorry, I had to wait until I made them again to figure out the measurements, I usually just eyeball everything Glad they were yummy!

    The only ways I fix sweet potatoes are french fries and as one ingredient for Roasted Root Vegetables.

    I take sweet potatoes or yams, red onion, halved brussel sprouts, carrots, and butternut squash. put in plastic bag with olive oil and shake to coat. salt, pepper.

    Roast on a baking sheet for about 30 minutes, turning halfway through. Gotta be careful cause the brussel sprouts will start to char.

    Regular week nights I bake them wrapped in foil in my crock pot and add a bit of Greek yogurt and honey it rocks

    I found that its best to roast the carrots and red onions 10 minutes before adding the rest for 25 more minutes. I halve the brussel sprouts, with sweet potatoes, and crimini mushrooms.

    I go at 360 degrees on a baking sheet lined w/ parchment paper.

    One sweet potato... dice into 1/2 inch cubes
    sprinkle with sea salt, and olive oil

    Pre cook meet of choice. Bacon, Smoked sausage, venison, buffalo, (I like Bacon or venison)

    In a saute' pan... mince 2 cloves of garlic and one shallot and saute' until clear.
    Add sweet mix and sauté for about 15-20 minutes.
    Add meet for 5 mins to re-heat.
    I like to add red pepper flake for ****e.. your choice
    Sprinkle with fresh italian parsley..

    Cook two eggs sunny side up and apply to the top of the potatoes..
    top of with more parsley for color.

    Eat...
