The hardest thing is eating out, because so much on menus are high carb. But eating at home is easier if you or your wife can cook.
If you would normally eat spaghetti and meat sauce,... instead of the spaghetti, steam cabbage and carrots al dente and pour the meat sauce over that.
It's easier in the summer months when the quality of fresh produce is higher.
If you can find some good crisp iceberg lettuce, use the lettuce leaves for the bun of a hamburger. You can load it with condiments.
I like large steamed artichokes.
Steak, seafood (unbreaded), steamed vegetables, salad.
Carrot sticks to replace potato chips.
snack: take a slice of provolone a few thin slices of oven baked deli-turkey **** meat, and smear of dijon mustard, and roll in a cylinder. With an olive.
Saute sliced boneless chicken **** in olive oil, well browned (unbreaded). Cool or chill. cut in bite size pieces in a bowl in pour over it a good quality salsa. For bottled, I like Herndez hot salsa.
One of my favorites is a shrimp ceviche. with lime juice, tomatoes, jicama, radishes, red onion, chiles serrano, english cucumber. I do cook the shrimp for a couple of minutes.

Being diabetic I have to watch the carbs. It ****ing sucks ****.
Spaghetti squash simulates pasta pretty well. And they are quite tasty.

I think kebobs are a great low carb option... just can't serve over rice.
Like chicken marinated in vinegarette dressing, and grilled with green pepper, red onion, and button mushrooms. In the winter when quality fresh tomatoes are scarce, sometimes I spring for a can of Italian plum tomatoes -San Marzano, as a side.

Had a calamari steak this evening with a cucumber/radish/green onion salad and chilled plum tomatoes. I marinated the calamari in olive oil and pepper for about 30 minutes, threw it in a hot cast iron skillet - four minutes on one side, two more on the other. Squeezed lemon. It was great.
My version of low carb is basically: no bread, tortillas, pasta, rice, potatoes, sugar. Or other things made from flour.
The menu then is meat, seafood, vegetables, and fruit.

I have found I like lunch style meat in lettuce wraps and almond butter on apples and celery so I pretty much cut out sandwiches. I use the tortillas in the morning with my egg, turkey bacon and spinach for breakfast on my non smoothie days. IE days when I know I am going to do more cardio
So I started this low carb thing Monday and it's all too easy so far.
First I've always been very skinny and by very I mean 6' 125 pounds when I was 25-26. Now I'm still skinny in my legs and arms I just have a huge gut and a little fatter in the face and Monday the 1st I weighed 197. Second I'm not much of a sweets or soda kinda person. I drink water at my desk all day and a salad with ranch is exponentially more awesome than cake. I'm also not a big eater. At as steak house after the salad and bread I usually have to take home a significant amount of a 10oz steak. Really I think what is going to be hard is the drinking less beer. I ****ing love to binge drink on Friday and Saturday and I have 2 parties and 2 weddings this month I must attend and I won't be able to drink.
So far so good been pretty easy and I feel better and have lost a bit of weight but waiting for at least a week to compare. I also fart way less than I did before. Not sure the correlation but its true.

So I went to a metal show last night and didnt drink at all. Metal and alcohol go together like strippers and daddy issues. So I met up with some girls I went to school with one of whom is a former stripper (Shes a Choctaw girl of course shes a stripper) and she had a couple of her younger stripper friends there. Now this is totally my arena. Making dumb girls laugh at my advances... but I was totally out of my game without my liquid courage. So it was hard but I did it. Now on too Saturday where I have to go to a club in Bricktown with a bunch of former Jegarmeister girls and party with them.... without drinking.... This could be hard. But I'm down a few pounds and still feeling good.
Woot! I started Monday and I'm down just a bit over 9lbs. Mostly I blame this on 1)the weight had been put on fairly recently 2)I'm very sensitive to carbs and gluten
Now if I can just drink enough water to keep it up.

Any clear liquor(non sugared) is good, however you won't be burning fat while your body metabolizes the alcohol. still though it doesn't make that big of difference
Had beef ribs, spinach salad and mashed cauliflower last night
Ha you know it isn't the same but the texture and taste is close.
I got to where I would roast cauliflower in olive oil and seasonings...take it to almost a burnt stage. Tastes a lot like popcorn except better, IMO. And it has a more pleasing texture than the mash.
Had cheddar and bacon stuffed jalepeno's for lunch.(4 whole, so 8 halves) around 230 calories and only 6 carbs was effing awesome and im still full
Omelet for breakfast, grilled chicken over salad for lunch, homemade meatballs with low carb bbq sauce & some cheesy broccoli for dinner
Weighed 194 this morning after sticking to this diet pretty strictly. I did drink Gentleman Jack Saturday night and that may have been the reason results haven't been as drastic as I thought they might be.
Ugh this week is hard. Crazy schedule makes dieting tough.![]()
Nice dessert
1 package sugar-free jello any flavor
1 cup boilong water
Mix and put in refrigerator until room temp ish
Put jello and 1 cup of ricotta cheese in blender and mix well
Put into bowls and refrigerate until set
I like to use orange jello and add a drop of orange extract and a drop of vanilla extract

Recipe: No Carb, No Sugar Ice Cream
3/4 cup water
1 1/4 cup heavy cream
1 .30 oz sugar free flavored gelatin
Bring water to a boil and stir in flavored gelatin packet. Stir the gelatin while boiling for 30-60 seconds or until completely dissolved. Pour the hot mixture straight into your square storage dish.
Add cream to the hot mixture and stir until the mixture has a lightened, milky tone throughout. Refrigerate mixture for at least two hours. Be sure to keep uncovered. Once the dessert has set firm, cover with lid and set in freezer at least one hour before serving. Remove from freezer, add some Ready Whip and enjoy every second of the yumminess!
Made last night, with raspberry and it was delish!
