    the filet at boulevard is pretty good...
    the filet at gaskin's cabin near eureka springs is tremendous...

    when i butcher my steers...they make ribeyes and tbones/porterhouses.....both are outstanding when good quality...
    the sirloins from a good show steer are also outstanding...

    Top sirloin/rump steak is great. I like my steak tender, I just think filets are to tender.

    Do the show steers get a special diet? What makes them better than regular beef? Not store beef but raised by a guy you know and taken to the local butcher.

    Had some grass fed ribeyes last night. Cooked over oak coals on one of my SM style grills. Mighty tasty.

    I have been giving performance appraisals the last few weeks. Had the pleasure of dining at some of the finest steakhouses in Texas. Perry's, Bobs, Trulucks. They aren't any better than I can do in my back yard. Just a $100 more expensive.

Spent most of my life there and have been cooking SM style for 20 plus years. I just refurbished my big one. Put an OU logo and some flames on it. Came out nice. Only way to cook over wood IMO.     I like the gamey taste and the fact it seems less fatty. I buy mine from a local ranch who sells at the Farmer's market. Their steaks are hard to beat to me as far as a pure beef flavor and I also buy ground from them too. The Nolan Ryan grass fed commercial beef at Kroger I buy when I can't make the Farmer's market isn't as good.

    Not at all! I was talking with Wendy about this on Friday. I've swapped out some of our beef from our ranch with a local rancher who does the grass fed thing. I grabbed some of his lamb as well... Meh!

    I don't prefer it, but I've had it. It's much leaner and probably better for you, but grain-fed beef is the shiz. Ours are grass-fed up until about the last 3 months or so. Then we pen them and feed them free-choice cubes, hay, and some corn. Even the round steaks are good.

    my youngest son thinks the same...
    when i grill a porterhouse....he would rather have the strip side of the tbone over the filet side...
    imo steak can't be too tender...
    had my last steer hung 28 days.....i used to request 21.....from now on it will be 28.....best beef i've ever had...
